Caramelized chicken

 



The Ingredients

8 boneless, skinless chicken thighs, quartered
3/4 tsp brown sugar
1/3 tsp cold water
1/3 tsp fish sauce
1/3 tsp rice vinegar
1 tbsp soy sauce 4 cloves
garlic, crushed 1
tbsp fresh grated ginger
1 tbsp sunflower oil
2 fresh jalapeno peppers, seeded and sliced
​​1/2 tsp roasted peanuts
1 bunch scallions, chopped
Fresh cilantro sprigs, for garnish


How to:

Whisk together brown sugar, water, fish sauce, rice vinegar, soy sauce, garlic, and ginger in a bowl until brown sugar is completely dissolved, about 1 minute. Set aside.
Heat oil in a skillet over high heat.
Add chicken to skillet and pour 1/3 cup of brown sugar mixture over chicken. Cook and stir until brown sugar mixture is syrupy, 6 to 7 minutes.
Pour in remaining brown sugar mixture and cook until chicken is tender and no longer pink inside, about 5 minutes.
Add peanuts, jalapenos, and scallions and cook 2 to 3 minutes.
Garnish with cilantro and serve.
